Ingredients

  • 400 grams Cottage cheese
  • 3 large Eggs
  • 250 ml Milk
  • 100 grams Sugar
  • 2 teaspoons Vanilla extract
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Baking powder
  • 2 tablespoons Butter (melted)
  • 50 grams Raisins (optional)
  • 1 teaspoon Lemon zest (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a medium-sized baking dish with a small amount of butter or non-stick spray.

Step 2

In a large mixing bowl, combine the cottage cheese, eggs, and sugar. Mix well until smooth using a whisk or a hand blender.

Step 3

Slowly add the milk, melted butter, and vanilla extract to the mixture. Stir until fully combined.

Step 4

In a separate bowl, sift together the all-purpose flour and baking powder. Gradually fold this dry mixture into the wet ingredients to avoid lumps.

Step 5

If using raisins, soak them in warm water for 5 minutes, then drain and fold into the batter along with the optional lemon zest.

Step 6

Pour the batter into the prepared baking dish, spreading it out evenly.

Step 7

Bake in the preheated oven for 35-40 minutes, or until the pudding is set and lightly golden on top. A toothpick inserted in the center should come out clean.

Step 8

Allow the pudding to cool slightly before serving. Serve warm or chilled, as desired. Garnish with fresh fruit, a dusting of powdered sugar, or a drizzle of honey if preferred.
