  • 2 pieces Boneless, skinless chicken breasts
  • 4 large caps Portabella mushrooms
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 1 cup Heavy cream
  • 0.5 cup Chicken broth
  • 1 teaspoon Fresh thyme leaves
  • 0.25 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Parsley, chopped (optional for garnish)

Directions

Step 1

1. Rinse and pat dry the chicken breasts. Season both sides with salt and black pepper.

2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and sear them for 5-6 minutes on each side until golden brown and fully cooked (internal temperature of 165°F). Remove the chicken from the skillet and set aside.

3. In the same skillet, add the remaining olive oil and 1 tablespoon of butter. Add the portabella mushrooms (caps facing down) and cook for 3-4 minutes per side until tender. Remove the mushrooms and set aside.
