Ingredients

  • 1 pre-made 9-inch crust Vegan pie crust
  • 14 ounces Silken tofu
  • 0.25 cups Unsweetened almond milk
  • 0.25 cups Nutritional yeast
  • 2 tablespoons Cornstarch
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely diced
  • 2 units Garlic cloves, minced
  • 4 cups Fresh spinach
  • 0.5 teaspoons Kala namak (black salt)
  • 0.25 teaspoons Turmeric powder
  • 0.25 teaspoons Ground nutmeg
  • 4 ounces Firm tofu
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Roll out your vegan pie crust in a 9-inch pie dish, gently pressing it into the sides, and trim or crimp the edges. Set aside.

Step 2

In a blender, combine the silken tofu, almond milk, nutritional yeast, cornstarch, kala namak, turmeric, nutmeg, salt, and black pepper. Blend until smooth and creamy. Set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

Step 4

Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

Step 5

Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Remove from heat.

Step 6

Crumble the firm tofu into small chunks and gently fold it into the spinach mixture.

Step 7

Pour the blended tofu mixture from the blender into the spinach skillet. Stir until everything is evenly combined.

Step 8

Pour the filling into the prepared pie crust, spreading it evenly with a spatula.

Step 9

Bake in the preheated oven for 40 minutes, or until the top is firm and lightly golden.

Step 10

Remove from the oven and allow the quiche to cool for 10 minutes before slicing. Serve warm or at room temperature.
