Ingredients

  • 2 cups long-grain white rice
  • 4 cups water or chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 large green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 1 pound ground beef
  • 0.5 pounds ground pork
  • 1.5 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoons dried thyme
  • 0.5 teaspoons ground black pepper
  • 0.5 teaspoons salt
  • 1 teaspoon hot sauce (optional)
  • 3 stalks green onions, sliced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

In a large pot, bring 4 cups of water or chicken broth to a boil. Add 2 cups of rice, reduce the heat to low, cover, and simmer for about 15-18 minutes or until the rice is tender and all the liquid is absorbed. Set aside and keep warm.
