Ingredients

  • 6 strips bacon
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 28 oz canned baked beans
  • 8 oz, drained canned crushed pineapple
  • 0.25 cup brown sugar
  • 0.25 cup ketchup
  • 1 tbsp yellow mustard
  • 0.5 tsp smoked paprika
  • 0.25 tsp black pepper
  • 0.25 tsp salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, cook the bacon over medium heat until it becomes crispy. Remove the bacon and place it on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces and set aside.

Step 3

In the same skillet, using the bacon drippings, cook the chopped onion over medium heat until it becomes translucent, about 4-5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

In a large mixing bowl, combine the baked beans, crushed pineapple, brown sugar, ketchup, mustard, smoked paprika, black pepper, and salt. Stir well to ensure the ingredients are evenly distributed.

Step 5

Add the sautéed onion and garlic mixture to the bowl, and stir again to incorporate.

Step 6

Transfer the mixture into a 9x13-inch baking dish or a similarly-sized oven-safe casserole dish. Spread evenly.

Step 7

Sprinkle the crumbled bacon over the top of the bean mixture.

Step 8

Bake uncovered in the preheated oven for 35-40 minutes, or until the edges are bubbly and the top is slightly caramelized.

Step 9

Remove from the oven and let it cool for 5 minutes before serving.

Step 10

Serve warm as a side dish to complement barbecue, fried chicken, or cornbread.
