Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 0.5 cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts
  • 1 pinch salt

Directions

Step 1

Line a baking sheet with parchment paper or wax paper and set aside.

In a heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, water, and a pinch of salt. Place over medium heat and stir until the sugar dissolves.

Once the sugar is dissolved, clip a candy thermometer to the side of the saucepan, making sure it doesn’t touch the bottom. Cook without stirring until the mixture reaches 250°F (hard ball stage). Remove from heat immediately.
