  • 0.5 cup light corn syrup
  • 0.5 cup cold water
  • 2 units large egg whites

Directions

Step 1

Prepare a baking sheet or large platter by lining it with parchment paper or lightly greasing it. Set aside.

In a medium saucepan, combine the granulated sugar, light corn syrup, and cold water. Stir over medium heat until the sugar dissolves completely.

Step 3

Increase the heat to medium-high and bring the mixture to a boil. Clip a candy thermometer to the side of the pan, ensuring the tip is submerged but not touching the bottom. Cook without stirring until the mixture reaches 260°F (hard ball stage).

Step 4

While the sugar mixture is heating, place the egg whites in a clean, dry mixing bowl. Using an electric mixer, beat the egg whites on high speed until stiff peaks form.

Once the sugar mixture reaches 260°F, remove it from the heat. With the mixer on low speed, carefully and slowly pour the hot sugar syrup into the whipped egg whites in a thin, steady stream.

Increase the mixer speed to high and beat the mixture until it thickens, turns glossy, and begins to hold its shape. This process can take 5-7 minutes. Add the vanilla extract and salt, and beat for an additional minute to combine.

If using nuts, gently fold them into the mixture with a spatula.

Using two spoons, drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into small mounds. Work quickly, as the mixture will set fast.

Allow the divinity to cool and set completely at room temperature, about 1-2 hours.

Step 10

Once set, store the divinity fudge in an airtight container at room temperature for up to 2 weeks.
