Ingredients

  • 1 cup Semolina (Suji)
  • 0.5 cup Ghee (Clarified Butter)
  • 0.75 cup Granulated Sugar
  • 1 cup Milk
  • 1.5 cups Water
  • 4 pods Green Cardamom Pods (crushed)
  • 2 tablespoons Cashews
  • 2 tablespoons Raisins
  • 2 tablespoons Almonds (chopped)
  • 0.25 teaspoons Saffron Strands (optional)

Directions

Step 1

In a saucepan, combine the water, milk, and saffron strands (if using). Heat this mixture over low heat until it's warm. Do not let it boil. Set it aside.

Step 2

In a heavy-bottomed pan or skillet, heat the ghee on medium heat.

Step 3

Add the cashews, almonds, and raisins to the ghee. Sauté until the nuts are golden and the raisins puff up. Remove them with a slotted spoon and set aside for garnish.

To the same pan, add the semolina (suji). Stir continuously over medium heat, roasting it until it becomes golden and emits a nutty aroma. Be careful not to burn it.

Once the semolina is roasted, lower the heat and slowly pour in the warm milk-water mixture while stirring constantly to avoid lumps. Be cautious, as the mixture may splatter.
