Ingredients

  • 8 oz Ditalini pasta
  • 1 lb Shrimp (peeled, deveined, and cooked)

  • 2 tbsp Fresh dill (chopped)
  • 2 tbsp Parsley (chopped)
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice (freshly squeezed)
  • 1 clove Garlic (minced)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 cup Crumbled feta cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the ditalini pasta according to package instructions (usually 8-10 minutes), or until al dente.

Step 2

Drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool completely.

Step 3

In a large mixing bowl, combine the cooled pasta, cooked shrimp, cherry tomatoes, cucumber, red onion, dill, and parsley.
