Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (cold, diced)
  • 0.75 cup heavy cream (plus extra for brushing)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup optional mix-ins (such as raisins, chocolate chips, or dried fruit)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the diced cold butter to the dry ingredients and use a pastry cutter or your fingertips to work it in until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 5

Pour the wet ingredients into the dry ingredients and stir gently until the dough just comes together. If using mix-ins (such as raisins or chocolate chips), fold them in at this stage.

Step 6

Transfer the dough to a lightly floured surface and gently pat it into a 1-inch thick disc.

Step 7

Use a sharp knife or a round cutter to divide the dough into 8 equal wedges or circles, and transfer them to the prepared baking sheet.

Step 8

Brush the tops of the scones with a little heavy cream to help them bake to a golden brown.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are risen and lightly golden on top.

Step 10

Let the scones cool slightly on the baking sheet before serving warm with your favorite spreads, such as clotted cream, butter, or jam.
