Directions

Step 1

Sort and rinse the Great Northern beans under cold water, discarding any debris or damaged beans.

Place the beans in a large bowl and cover with water. Soak overnight, or use a quick-soak method by boiling them for 2 minutes, then letting them sit covered for 1 hour. Drain and rinse.

In a large stockpot or Dutch oven, combine the soaked beans, 8 cups of water, and the ham bone or smoked ham hock. Bring to a boil over medium-high heat.
