Ingredients

  • 1 cup Thick-cut bacon
  • 1 medium, finely diced Red onion
  • 1 stalk, finely diced Celery
  • 3 tablespoons Butter
  • 0.25 cup All-purpose flour
  • 3 cups Chicken stock
  • 2 cups Whole milk
  • 8 ounces, shredded Canadian cheddar cheese
  • 0.5 cup Beer (preferably Canadian lager)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon (or to taste) Salt
  • 0.25 teaspoon (or to taste) White pepper
  • 2 tablespoons, chopped (for garnish) Chives

Directions

Step 1

In a large heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels. Leave about 2 tablespoons of bacon fat in the pot.

Step 2

Add the finely diced red onion and celery to the pot with the bacon fat. Cook over medium heat, stirring occasionally, until the vegetables are softened, about 5 minutes.

Step 3

Stir in the butter and let it melt completely. Once melted, sprinkle the all-purpose flour into the pot, stirring constantly to make a roux. Cook the roux for 2-3 minutes until it has a golden, nutty aroma.

Step 4

Slowly pour in the chicken stock, whisking constantly to prevent lumps. Bring the mixture to a simmer and allow it to thicken, about 5 minutes.

Step 5

Stir in the whole milk and season with salt and white pepper. Continue cooking until the soup is heated through and slightly thickened, about 5 more minutes.

Step 6

Gradually add the shredded cheddar cheese a handful at a time, stirring after each addition to ensure the cheese melts smoothly into the soup.

Step 7

Pour in the beer, Worcestershire sauce, and Dijon mustard. Stir well to incorporate all the flavors. Simmer the soup for another 5 minutes, but do not let it boil.

Step 8

Taste the soup and adjust seasonings as needed. Serve the soup hot, topped with the crispy bacon and a sprinkle of chopped chives for garnish.
