Ingredients

  • 6 cups Mixed baby greens (spinach, arugula, kale, etc.)
  • 1 pint Cherry tomatoes
  • 1 medium Cucumber
  • 1 large Red bell pepper
  • 1 large Avocado
  • 1 cup Feta cheese (crumbled)
  • 1 cup Toasted almonds
  • 0.5 cup Fresh parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash and thoroughly dry the mixed baby greens. Place them in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the salad bowl.

Step 3

Chop the cucumber into thin half-moons and dice the red bell pepper. Add both to the bowl.

Step 4

Cut the avocado into small cubes and gently toss it into the salad just before serving to avoid browning.
