  • 2 stalks celery stalks, diced
  • 3 garlic cloves, minced
  • 1.5 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon kosher salt
  • 3 scallions (green onions), chopped
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch. Drain well.

Step 2

In a medium saucepan, combine the rice and chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed. Set aside and fluff with a fork.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the ground pork sausage and cook, breaking it up into small pieces, until browned and fully cooked, about 5-6 minutes. Remove the sausage from the skillet with a slotted spoon and set aside.
