  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 2 cups heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup chicken broth or stock
  • 2 tablespoons butter
  • 2 stalks green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium heat. Slice the andouille sausage into rounds, then sauté until browned. Remove the sausage and set aside.

Season the chicken thighs with 1 tablespoon of Cajun seasoning and a pinch of salt and pepper. In the same skillet, add another tablespoon of olive oil and cook the chicken until browned and fully cooked (about 6-7 minutes per side).
