Ingredients

  • 1.5 cups brown rice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 links andouille sausage, sliced
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 green onions, chopped
  • 0 to taste hot sauce (optional)

Directions

Step 1

Rinse the brown rice thoroughly under cold water and set aside.

Step 2

Season the shrimp with a pinch of salt, black pepper, and a sprinkle of paprika. Set aside.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced andouille sausage and cook until browned, about 3-4 minutes. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the diced onion, green bell pepper, and celery until softened, about 5 minutes.

Step 5

Add the minced garlic to the skillet and cook for 1 minute until fragrant.

Step 6

Stir in the rinsed brown rice, paprika, cayenne pepper, dried thyme, salt, and black pepper. Cook for 2 minutes, coating the rice with the spices for added flavor.

Step 7

Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let the rice simmer for about 35 minutes or until tender and the liquid is absorbed.

Step 8

When the rice is almost done, stir in the cooked sausage and seasoned shrimp. Cover and cook for an additional 3-5 minutes, or until the shrimp turns pink and opaque.

Step 9

Taste and adjust seasonings as needed. If desired, add a splash of hot sauce for extra spice.

Step 10

Garnish with chopped green onions before serving. Enjoy your Dirty Brown Rice with Shrimp warm!
