  • 6 pieces bell peppers (any color)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 stalks celery, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 0.5 pounds ground beef or sausage (optional for non-vegetarian option)
  • 1 15-ounce can black beans, drained and rinsed
  • 2 cups cooked white or brown rice
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 14.5-ounce can diced tomatoes with their juice
  • 1 cup shredded cheddar or pepper jack cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley or green onions for garnish, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides and insides of the peppers with 1 tablespoon of oil and arrange them upright in a baking dish.

Step 3

Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced onion, celery, and green bell pepper, and sauté for 5-7 minutes until softened.

Stir in the minced garlic and cook for an additional 1-2 minutes.

If using ground beef or sausage, add it to the skillet and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

Add the black beans, cooked rice, diced tomatoes with their juice, Cajun seasoning, smoked paprika, thyme, salt, and black pepper to the skillet. Stir everything together and let it simmer for 5-7 minutes to allow the flavors to meld.

Remove the filling mixture from heat. Taste and adjust seasonings as needed.

Spoon the dirty beans and rice mixture into the prepared bell peppers, packing them tightly. Sprinkle the tops with shredded cheese.
