  • 2 racks pork baby back ribs
  • 3 tablespoons brown sugar

  • 1 teaspoon ground black pepper

  • 0.5 teaspoon cayenne pepper (optional)
  • 1 teaspoon mustard powder
  • 2 cups hickory or mesquite wood chips (if smoking)
  • 1 cup your favorite BBQ sauce
  • 0.5 cup apple juice

Directions

Step 1

Remove the membrane from the back of the rib racks by sliding a knife under the thin silver skin and pulling it off with a paper towel for grip.

Step 2

Make a dry rub by mixing together the brown sugar, paprika, garlic powder, onion powder, black pepper, kosher salt, mustard powder, and cayenne pepper if using.

Generously coat both sides of the ribs with the dry rub, massaging it into the meat. Let the ribs sit for 20-30 minutes to absorb the flavors.

If smoking, preheat your smoker to 225°F and soak the wood chips in water for 30 minutes. If using a grill or oven, preheat to 225°F and prepare for indirect heat cooking.
