Ingredients

  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
  • 0.25 cup granulated sugar
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 cup heavy cream (optional, for topping)
  • 2 tablespoons powdered sugar (optional, for topping)
  • 1 cup fresh berries (optional, for topping)

Directions

Step 1

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set it aside.

Step 2

In a medium bowl, mix the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until the mixture resembles wet sand.

Step 3

Press the crumb mixture firmly and evenly into the bottom of the prepared springform pan to form the crust. Set aside.

Step 4

In a large mixing bowl, beat the softened cream cheese and 1 cup sugar together with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Step 5

Add the sour cream and vanilla extract to the cream cheese mixture. Mix until well combined.

Step 6

One at a time, add the eggs to the mixture, mixing on low speed after each addition just until combined. Avoid overmixing to prevent cracks in the cheesecake.

Step 7

Pour the cream cheese filling over the prepared crust in the springform pan and smooth the top with a spatula.

Step 8

Place the springform pan on a baking sheet to catch any drips. Bake the cheesecake in the preheated oven for 55-60 minutes, or until the edges are set, and the center has a slight wobble.

Step 9

Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to allow it to cool slowly. This helps to prevent cracking.

Step 10

Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate it for at least 4 hours, or preferably overnight, to allow it to fully set.

Step 11

Before serving, optionally whip the heavy cream and powdered sugar together until soft peaks form. Spread or pipe the whipped cream on top of the cheesecake and garnish with fresh berries.

Step 12

Slice and serve chilled. Enjoy Dirk's Birthday Cheesecake!
