Ingredients

  • 2.25 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon

  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.25 cup molasses
  • 1 unit large egg
  • 0.5 cup coarse sugar (for rolling)
  • 1.5 cups white chocolate chips
  • 1 tablespoon coconut oil or shortening

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.

Step 3

In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Add the molasses and egg to the butter-sugar mixture, beating until fully combined.

Gradually add the dry ingredients into the wet mixture, mixing just until incorporated and the dough comes together.
