Ingredients

  • 6 pieces Large eggs
  • 3 tablespoons Mayonnaise
  • 1 teaspoon Yellow mustard
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Pickle relish
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 3 drops Green food coloring (optional, for effect)
  • 2 slices Cooked bacon, crumbled
  • 2 tablespoons Chopped chives
  • 6 sprigs Small edible herbs or dill

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with cold water by about an inch. Bring the water to a boil over medium heat.

Step 2

Once the water reaches a rolling boil, turn off the heat, cover the pan, and let the eggs sit in the hot water for 10-12 minutes.

Step 3

Carefully drain the saucepan and transfer the eggs to an ice water bath to cool for at least 5 minutes. This will make peeling easier.

Step 4

Peel the eggs by tapping them lightly on the counter, rolling them gently to crack the shell, and removing the shell under running water.

Step 5

Slice each egg in half lengthwise and carefully scoop out the yolks into a medium mixing bowl. Place the egg white halves on a platter.

Step 6

Mash the yolks with a fork until they are smooth and crumbly.

Step 7

Add mayonnaise, yellow mustard, Dijon mustard, pickle relish, smoked paprika, salt, and black pepper to the yolks. Mix until combined into a creamy filling.

Step 8

If you'd like to add a dinosaur theme, mix in 2-3 drops of green food coloring to the filling until evenly tinted.

Step 9

Transfer the yolk mixture to a piping bag or a zip-top bag with the corner snipped off. Pipe the filling into the hollow centers of the egg whites.

Step 10

Top each deviled egg with a pinch of crumbled bacon and a sprinkle of chopped chives for a crunchy and colorful garnish.

Step 11

For a final prehistoric touch, garnish each egg with a small sprig of herb or dill, resembling a 'fern' from the dinosaur era.

Step 12

Serve immediately or refrigerate for up to 4 hours before serving. Enjoy!
