  • 2 cups baby spinach leaves
  • 1 cucumber, thinly sliced
  • 1 tomato, thinly sliced
  • 0.5 red onion, thinly sliced
  • 0.5 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Slice the chicken thighs into thin strips and place them in a bowl.

Step 2

In a small bowl, mix olive oil, cumin, coriander, paprika, garlic powder, salt, and black pepper to create the marinade.

Pour the marinade over the chicken strips and toss until the chicken is evenly coated. Let it sit while preparing other ingredients.
