Ingredients

  • 500 grams Spelt flour
  • 300 milliliters Water
  • 7 grams Active dry yeast
  • 30 grams Honey
  • 10 grams Salt
  • 30 milliliters Olive oil
  • 30 grams Sesame seeds or sunflower seeds (optional)

Directions

Step 1

In a large mixing bowl, combine the warm water and honey. Stir until the honey is completely dissolved.

Step 2

Sprinkle the active dry yeast over the water and honey mixture. Let it sit for about 5-10 minutes until it becomes frothy and bubbly. This indicates that the yeast is active.

Step 3

Add the spelt flour and salt to the yeast mixture. Mix until a dough begins to form.

Step 4

Pour in the olive oil and continue mixing until the dough is smooth and slightly sticky. If the dough is too sticky, add a bit more spelt flour, one tablespoon at a time, until manageable.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 10 minutes until elastic and smooth.

Step 6

Shape the kneaded dough into a ball and place it in a lightly oiled bowl, turning it once to coat all sides with oil. Cover the bowl with plastic wrap or a damp kitchen towel.

Step 7

Let the dough rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.

Step 8

Preheat your oven to 220°C (430°F).

Step 9

Once the dough has risen, punch it down to deflate slightly. Shape it into a loaf and place it into a greased loaf pan.

Step 10

If desired, sprinkle the top of the loaf with sesame or sunflower seeds, pressing them gently into the dough.

Step 11

Let the dough rise again in the loaf pan for about 20-30 minutes, or until it has puffed up.

Step 12

Bake the bread in the preheated oven for 35-40 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.

Step 13

Remove the bread from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
