  • 4 large eggs
  • 2 tablespoons milk
  • 3 tablespoons butter
  • 1 cup (shredded) cheddar cheese
  • 1 cup (diced) ham
  • 1 small (diced) bell pepper
  • 1 cup (sliced) mushrooms
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 large egg yolks
  • 1 tablespoon lemon juice
  • 0.5 cup (melted) unsalted butter
  • 1 tablespoon water

Directions

Step 1

Crack 4 large eggs into a bowl and whisk together with 2 tablespoons of milk, 0.5 teaspoons of salt, and 0.25 teaspoons of black pepper. Set aside.

Step 2

In a nonstick skillet, melt 1 tablespoon of butter over medium heat and sauté the diced bell pepper, sliced mushrooms, and diced ham for 3-4 minutes until softened. Remove from the skillet and set aside.

Step 3

Wipe the skillet clean and add another tablespoon of butter. Pour half the egg mixture into the skillet and cook over medium-low heat. Use a spatula to gently pull the edges toward the center as the egg sets, allowing uncooked egg to flow to the edges.

Step 4

When the omelet is mostly set but still slightly runny on top, scatter half of the cheese and half of the sautéed filling over one half of the omelet. Fold the omelet in half to cover the filling and cook for an additional 1-2 minutes until the cheese is melted. Repeat with the remaining egg mixture, cheese, and filling.

To prepare the Hollandaise sauce, whisk 2 egg yolks, 1 tablespoon of water, and 1 tablespoon of lemon juice in a heatproof bowl. Place the bowl over a pot of simmering water without letting the bottom touch the water.

Step 6

Slowly drizzle in the melted unsalted butter while continuously whisking until the mixture thickens and achieves a smooth, creamy consistency. Remove from heat and season with a pinch of salt if desired.

Step 7

Plate the omelets and generously drizzle the Hollandaise sauce over the top. Serve immediately with a side of toast or hash browns for a complete diner-style experience.
