Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper. Lightly spray the parchment paper with non-stick cooking spray.
Peel and grate the potatoes using the large holes of a box grater or a food processor with a grating attachment. Place the grated potatoes in a clean kitchen towel and wring out as much moisture as possible over a sink.
Grate the onion and add it to the potatoes. Use the kitchen towel again to squeeze out excess moisture from the potato and onion mixture.
In a large bowl, beat the eggs. Add the grated potato and onion mixture, flour, salt, black pepper, and baking powder. Mix well to combine.
