  • 4 pieces sole fillets
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cups all-purpose flour
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh dill
  • 0.25 cups heavy cream
  • 1 clove garlic
  • 1 teaspoon lemon zest

Directions

Step 1

Rinse the sole fillets under cold water and pat them dry with paper towels.

Season both sides of the fillets with salt and black pepper.

Step 3

Dredge each fillet lightly in all-purpose flour, shaking off any excess.

In a large nonstick skillet, heat the olive oil and 1 tablespoon of butter over medium heat.

Cook the fillets in batches, about 2-3 minutes per side, until golden and cooked through. Transfer cooked fillets to a plate and keep warm.
