Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Butter
  • 2 large Garlic cloves
  • 1 cup Heavy cream
  • 0.5 cup Milk
  • 3 tablespoons Fresh dill
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 8 cups Water

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes for even cooking.

Step 2

In a large pot, bring 8 cups of water to a boil. Add the potatoes and a pinch of salt, then reduce the heat to medium. Simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes are cooking, finely mince the garlic cloves and chop the fresh dill. Set aside.

Step 4

Drain the boiled potatoes and return them to the pot. Place the pot back on low heat and stir the potatoes gently for 1-2 minutes to evaporate any remaining water.

Step 5

In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant but not browned.

Step 6

Add the heavy cream and milk to the butter and garlic mixture. Heat until warm but not boiling.

Step 7

Remove the potatoes from the heat and mash them with a potato masher or hand mixer until smooth.

Step 8

Gradually pour in the warm cream mixture, stirring continuously, until the potatoes reach your desired consistency.

Step 9

Season the mashed potatoes with salt and ground black pepper, then fold in the fresh dill.

Step 10

Serve immediately, garnished with a sprinkle of extra dill if desired.
