Ingredients

  • 4 medium (about 1.5 lbs total) zucchini
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 3 tablespoons fresh dill
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parmesan cheese (optional)

Directions

Step 1

Wash the zucchini thoroughly and trim off the ends. Slice the zucchini into thin rounds, approximately 1/4-inch thick.

Step 2

Peel and finely mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add the olive oil.

Step 4

Once the oil is shimmering, add the minced garlic to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 5

Add the sliced zucchini to the skillet and toss to coat evenly in the oil and garlic.

Step 6

Cook the zucchini for 5-7 minutes, stirring occasionally, until it becomes tender but still slightly crisp.

Step 7

While the zucchini cooks, chop the fresh dill finely.

Step 8

Once the zucchini is done, remove the skillet from the heat. Stir in the fresh dill, lemon juice, salt, and black pepper.

Step 9

Taste and adjust seasoning if needed. If desired, sprinkle with parmesan cheese before serving.

Step 10

Serve warm as a side dish or with a sprinkle of extra dill for garnish.
