Ingredients

  • 1 pound ground turkey
  • 4 medium russet potatoes
  • 1 medium yellow onion
  • 2 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 2 tablespoons butter
  • 6 cups chicken broth
  • 1 cup whole milk
  • 3 tablespoons dill (fresh, chopped)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried dill (optional)

Directions

Step 1

Peel and dice the potatoes into bite-sized pieces. Dice the onion, carrots, and celery. Mince the garlic.

Step 2

In a large soup pot, heat the olive oil over medium heat. Add the ground turkey, breaking it into small pieces with a wooden spoon. Cook until browned, about 5-7 minutes. Remove the turkey from the pot and set aside.

Step 3

In the same pot, melt the butter over medium heat. Add the onion, carrots, celery, and garlic. Sauté for 5 minutes until the vegetables begin to soften.

Step 4

Sprinkle the flour over the vegetables and stir to coat evenly. Cook for 1 minute to remove the raw flour taste.

Step 5

Slowly pour in the chicken broth while stirring constantly to avoid lumps. Bring the mixture to a boil.

Step 6

Add the diced potatoes to the pot and season with salt, black pepper, and dried dill (if using). Reduce the heat to a simmer, cover, and cook for 15 minutes or until the potatoes are fork-tender.

Step 7

Return the cooked ground turkey to the pot and stir to combine. Cook for an additional 5 minutes to heat the turkey through.

Step 8

Stir in the milk and fresh dill, and let the soup warm through for 2-3 minutes. Do not let it boil to prevent curdling.

Step 9

Taste and adjust seasoning if needed. Serve hot, garnished with extra fresh dill if desired.
