Directions

Step 1

Wash the green tomatoes, onion, and red bell pepper thoroughly. Dice the tomatoes, chop the onion finely, and seed and dice the red bell pepper.

In a large mixing bowl, combine the tomatoes, onion, and bell pepper with the kosher salt. Toss well to ensure even coverage. Let the mixture sit for about 30 minutes. This will draw out excess moisture from the vegetables.

After 30 minutes, drain the vegetables in a colander and rinse under cold water to remove the excess salt. Pat the mixture dry with clean paper towels to remove as much moisture as possible.

In a large, heavy-bottomed pot, combine the vinegar, sugar, mustard seeds, celery seeds, and ground turmeric. Stir the mixture and heat over medium heat until the sugar is completely dissolved and the liquid begins to simmer.
