Ingredients

  • 1 pound fresh green beans
  • 4 medium fresh dill sprigs
  • 2 large garlic cloves
  • 2 cups water
  • 1 cup white vinegar
  • 1 tablespoon pickling salt
  • 1 teaspoon sugar
  • 1 teaspoon mustard seeds
  • 0.5 teaspoon red pepper flakes

Directions

Step 1

Wash and trim the ends of the green beans. Keep them whole for a classic presentation or cut into smaller pieces, if preferred.

Step 2

Sterilize two pint-sized glass jars by boiling them in water for 10 minutes. Let the jars air dry while you prepare the ingredients.

Step 3

Peel the garlic cloves and cut them in half. Divide the garlic cloves and the fresh dill sprigs evenly between the two jars.

Step 4

In a medium saucepan, combine the water, white vinegar, pickling salt, sugar, mustard seeds, and red pepper flakes. Bring the mixture to a boil over medium-high heat, stirring to dissolve the salt and sugar.

Step 5

Tightly pack the green beans upright into the jars, leaving about 1/2 inch of headspace at the top.

Step 6

Carefully pour the hot vinegar mixture over the green beans in the jars, ensuring the beans are fully submerged. Leave about 1/2 inch of headspace at the top of the jars.

Step 7

Wipe the rims of the jars with a damp paper towel to remove any spills. Seal the jars with sterilized lids and rings, tightening them just until snug.

Step 8

Optionally, process the jars in a boiling water bath for 5 minutes if you plan to store them long-term. If skipping this step, refrigerate the jars immediately after cooling.

Step 9

Allow the dilled green beans to pickle for at least 48 hours in the refrigerator before enjoying, to allow the flavors to fully develop.
