Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 1.5 pounds baby potatoes
  • 3 pieces carrots (peeled and cut into chunks)

  • 1 large onion (sliced)
  • 2 tablespoons butter
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 0.5 cup sour cream

Directions

Step 1

Wash and halve the baby potatoes; set them aside.

Step 2

Peel and slice the onion and carrots into bite-sized chunks.

Step 3

In a medium skillet, melt the butter over medium heat. Add the minced garlic and sliced onions and cook for 2-3 minutes, until fragrant and slightly softened.
