Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons fresh dill
  • 0.5 medium red onion
  • 2 celery stalks
  • 0.25 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the sweet potatoes and cut them into 1-inch cubes.

Step 2

Bring a large pot of salted water to a boil. Add the sweet potato cubes and boil for 10-12 minutes, or until tender but not falling apart. Drain and let cool completely.

Step 3

While the sweet potatoes cool, finely chop the fresh dill, dice the red onion, and slice the celery stalks into thin pieces.

Step 4

In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, honey, salt, and black pepper to create the dressing.

Step 5

Once the sweet potatoes are cool, gently toss them in the mixing bowl with the dressing to coat evenly.

Step 6

Add the chopped dill, diced red onion, and sliced celery to the bowl and gently mix until combined.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld together.

Step 8

Serve chilled as a side dish or light main course. Garnish with additional fresh dill, if desired.
