  • 3 lbs Beef chuck roast
  • 1.5 cups Dill pickle juice
  • 4 whole (sliced) Dill pickles
  • 1 cup Beef stock
  • 2 tbsp Unsalted butter
  • 3 minced Garlic cloves
  • 1 large (sliced) Onion
  • 1 tsp Dried dill
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil

Directions

Step 1

Preheat your oven to 300°F (150°C).

Season the beef chuck roast generously with salt, black pepper, and paprika on all sides.

Heat olive oil in a large, oven-safe Dutch oven over medium-high heat. Sear the roast on all sides until golden brown, about 2-3 minutes per side. Remove the roast and set aside.
