Ingredients

  • 400 grams salmon (skinless, boneless)
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon dijon mustard
  • 50 grams panko breadcrumbs
  • 1 clove garlic (finely minced)
  • 1 large egg
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

If using fresh salmon, pat it dry with a paper towel and finely chop or pulse it in a food processor until you achieve a coarse texture. If using canned salmon, drain it thoroughly and flake with a fork.

In a large mixing bowl, combine the chopped or flaked salmon, chopped dill, Dijon mustard, panko breadcrumbs, minced garlic, egg, lemon zest, lemon juice, salt, and black pepper. Mix until all the ingredients are fully incorporated.
