Directions

Step 1

Take the steaks out of the refrigerator about 30 minutes before cooking to bring them to room temperature, which ensures even cooking.

Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. When the oil is shimmering hot, add the steaks.
