Take the steaks out of the refrigerator about 30 minutes before cooking to bring them to room temperature, which ensures even cooking.
Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. When the oil is shimmering hot, add the steaks.
Sear the steaks for 3-4 minutes per side for medium-rare, or cook to your desired doneness. Use a meat thermometer, aiming for 130°F for medium-rare. Remove the steaks from the pan and let them rest on a plate, tented with foil.
Reduce the heat to medium and add the remaining tablespoon of olive oil and the butter to the skillet. Once the butter has melted, stir in the minced garlic and cook for 1 minute until fragrant.
Deglaze the skillet by adding the beef broth. Scrape the browned bits from the bottom of the skillet with a wooden spoon, which will add depth of flavor to the sauce.
Stir in the Dijon mustard and heavy cream. Let the sauce simmer for 2-3 minutes until slightly thickened.
Add the fresh thyme (if using) and season the sauce with additional salt and pepper to taste.
Return the steaks to the skillet and spoon the Dijon sauce over the top. Cook for 1-2 minutes to reheat the steaks and meld the flavors.
Serve the steaks immediately, drizzled with extra Dijon sauce. Pair with roasted vegetables or mashed potatoes for a complete meal.
