Ingredients

  • 3 pounds pork loin roast
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon fresh rosemary
  • 3 cloves garlic cloves, minced
  • 1 cup dried cranberries
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the pork loin roast with salt and black pepper on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 2–3 minutes per side. Remove the pork and set aside.

In a small bowl, mix Dijon mustard, honey, minced garlic, and fresh rosemary to create the glaze.

Place the seared pork roast into the crock pot. Spread the Dijon mustard glaze evenly over the pork.
