Ingredients

  • 4 pieces pork chops (bone-in or boneless)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 0.5 cups chicken or vegetable stock
  • 1 teaspoons fresh thyme leaves
  • 1 teaspoons fresh rosemary, chopped
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons optional chopped parsley (for garnish)

Directions

Step 1

Pat the pork chops dry with paper towels. Season both sides with salt and black pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear each side for about 3-4 minutes, or until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add butter to the same skillet. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Stir in the Dijon mustard and red wine vinegar, letting the mixture simmer for 1 minute.

Step 5

Pour in the chicken or vegetable stock and add the thyme and rosemary. Stir well to combine the sauce.

Step 6

Return the pork chops to the skillet, spooning some of the sauce over the top of the chops. Reduce the heat to low, cover, and let simmer for 10-12 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F/63°C).

Step 7

Uncover the skillet and let the sauce simmer for an additional 2-3 minutes to thicken slightly. Taste and adjust seasoning if needed.

Step 8

Transfer the pork chops to serving plates, spoon the sauce over the top, and garnish with optional chopped parsley. Serve immediately.
