Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons Olive oil
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Honey
  • 2 cloves Garlic cloves (minced)
  • 1 tablespoon Fresh rosemary (chopped)
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a medium-sized mixing bowl, whisk together Dijon mustard, olive oil, apple cider vinegar, honey, minced garlic, chopped rosemary, paprika, salt, and black pepper to create the marinade.

Step 2

Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Step 3

Preheat your grill to medium-high heat, about 375-400°F (190-205°C). Oil the grates lightly to prevent sticking.

Step 4

Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the used marinade.

Step 5

Place the chicken thighs skin-side down on the grill. Cook for about 6-7 minutes, then flip and cook for another 6-7 minutes on the other side, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.

Step 6

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving to allow the juices to redistribute.

Step 7

Serve hot with your favorite BBQ sides like grilled vegetables, potato salad, or coleslaw.
