Ingredients

  • 4 pieces snapper fillets
  • 3 tablespoons Dijon mustard
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces lemon wedges

Directions

Step 1

Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper or lightly grease with olive oil.

Step 2

Pat the snapper fillets dry with paper towels and place them skin-side down on the prepared baking sheet.

Step 3

Spread 1 tablespoon of Dijon mustard evenly over the top of each fillet. Set aside.

Step 4

In a medium-sized bowl, combine panko breadcrumbs, fresh parsley, grated Parmesan cheese, lemon zest, olive oil, salt, and black pepper. Mix until the ingredients are evenly incorporated.

Step 5

Spoon the breadcrumb mixture onto the Dijon-covered side of each fillet. Press the mixture gently into the mustard to ensure it adheres well.

Step 6

Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the crust is golden brown and the fish is cooked through (an internal temperature of 145°F/63°C).

Step 7

If needed, broil the fish for an additional 1-2 minutes to deepen the crust's golden color; keep a close eye to avoid burning.

Step 8

Remove the snapper from the oven and let it rest for 2 minutes. Serve with lemon wedges for squeezing over the top.
