  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 12 ounces cremini mushrooms, sliced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 teaspoon paprika
  • 12 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season both sides of the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Reduce the heat to medium, and melt the butter in the same skillet. Add the diced onion and cook until softened, about 3-4 minutes.
