  • 1 large Yellow bell pepper
  • 1 medium Zucchini

  • 12 pieces Wooden skewers (soaked in water for 30 minutes)
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

Step 2

In a medium bowl, whisk together Dijon mustard, olive oil, honey, lemon juice, minced garlic, paprika, salt, and black pepper to create the marinade.

Add the chicken cubes to the bowl with the marinade. Toss to coat evenly. Cover and refrigerate for at least 20 minutes to marinate (or up to 4 hours for more flavor, if time allows).
