Ingredients

  • 12 oz fettuccine pasta
  • 2 large chicken breast
  • 2 tbsp olive oil
  • 3 pieces garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 tbsp Dijon mustard
  • 1 cup Parmesan cheese, grated
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

While the pasta cooks, slice the chicken breasts into thin strips.

Step 3

Heat olive oil in a large skillet over medium heat. Add the chicken strips and season with salt and black pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned and fully cooked. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
