Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat.

Step 3

Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

Step 5

Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.

Step 6

Stir in the Dijon mustard and heavy cream, and allow the sauce to come to a simmer.

Step 7

Add fresh thyme and return the chicken to the skillet, coating it in the sauce.

Step 8

Reduce the heat to low and let the chicken simmer in the sauce for another 5 minutes.

Step 9

Stir in the lemon juice and half of the chopped parsley. Adjust seasoning with more salt and pepper if needed.

Step 10

Serve the chicken hot, garnished with the remaining parsley.
