  • 2 stalks celery stalks

  • 2 cups cabbage
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Dice the yellow onion and mince the garlic cloves. Add them to the pot and sauté for 3-4 minutes until softened.

Peel and slice the carrots, and chop the celery stalks. Add them to the pot and cook for another 5 minutes, stirring occasionally.
