Ingredients

  • 150 grams Whole wheat flour
  • 50 grams Oats
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 125 grams Unsweetened applesauce
  • 100 grams Plain Greek yogurt
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 60 grams Honey
  • 100 grams Fresh blueberries (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large bowl, whisk together the whole wheat flour, oats, baking powder, baking soda, and salt.

Step 3

In a separate medium bowl, whisk together the applesauce, Greek yogurt, egg, vanilla extract, and honey until smooth and well combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and gently fold the mixture together using a spatula. Ensure there are no large pockets of flour but do not overmix.

If using fresh blueberries, gently fold them into the batter to distribute evenly.
