Ingredients

  • 1 medium head Green cabbage
  • 3 medium Carrots
  • 3 medium Celery stalks
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 1 medium Bell pepper (any color)
  • 1 medium Zucchini
  • 2 cups Diced tomatoes (canned or fresh)
  • 6 cups Vegetable broth
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 piece Bay leaf
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Wash all the vegetables thoroughly.

Step 2

Slice the cabbage into thin shreds, about 1/2 inch wide.

Step 3

Peel the carrots and chop them into small discs or bite-sized pieces.

Step 4

Chop the celery stalks into small pieces.

Step 5

Dice the onion and the bell pepper into small cubes.

Step 6

Mince the garlic cloves finely.

Step 7

Cut the zucchini into small bite-sized pieces.

Heat the olive oil in a large pot over medium heat.
