Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter
  • 1.25 teaspoons baking powder
  • 0.25 teaspoons salt
  • 2 pieces large eggs
  • 0.5 cup whole milk
  • 2 teaspoons vanilla extract
  • 2 cups powdered sugar
  • 3 tablespoons heavy cream
  • 0 as needed food coloring (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the butter and granulated sugar until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in the vanilla extract.

Step 5

Reduce the mixer speed to low and alternate adding the dry ingredients and the milk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6

Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

Step 7

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 8

Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Step 9

While the cupcakes are cooling, prepare the frosting. In a clean mixing bowl, beat the powdered sugar, heavy cream, and remaining vanilla extract until smooth and fluffy. If using food coloring, add a few drops and beat until the color is even.

Step 10

Once the cupcakes are completely cool, frost them using a piping bag or a spatula.

Step 11

Decorate as desired and serve!
