Ingredients

  • 3 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 16 ounces Cremini mushrooms, sliced
  • 8 ounces White button mushrooms, sliced
  • 1 teaspoon Dried thyme
  • 2 tablespoons All-purpose flour
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot, heat the butter and olive oil over medium heat until the butter is melted.

Step 2

Add the finely chopped onion and cook for 5-7 minutes, stirring frequently, until soft and translucent.

Step 3

Stir in the minced garlic and cook for about 1 minute, until fragrant.

Step 4

Add the cremini and white button mushrooms to the pot and sauté for 8-10 minutes, stirring occasionally, until the mushrooms have released their moisture and are golden brown.

Step 5

Sprinkle the dried thyme and all-purpose flour over the mushrooms. Stir well to coat, and cook for another 1-2 minutes to eliminate the raw flour taste.

Step 6

Slowly pour in the chicken or vegetable broth while stirring constantly to prevent lumps. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes.

Step 7

Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender, then return it to the pot.

Step 8

Stir in the heavy cream, salt, and black pepper. Adjust the seasoning to taste.

Step 9

Simmer the soup for an additional 5 minutes. Do not let it boil after adding the cream.

Step 10

Serve hot, garnished with freshly chopped parsley if desired.
