Ingredients

  • 0.25 cup Fresh parsley (chopped)
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Step 2

While the pasta is cooking, prepare the vegetables. Slice the cherry tomatoes in half, dice the cucumber, red bell pepper, and red onion. Set aside.
